Coconut flour Muffins

The basic recipe makes filling LCHF muffins and recsembles scones in texture. If you add sweetening and different flavorings they make amazing compliments to your coffee or tea! I’ll give some different tips on flavouring I tried further down in the post.

Basic recipe

6-7 eggs
100g melted butter or oil, preferable virgin coconut oil, but plain canola oil works fine.
1.5 to 1.75 dl coconut flour
1.5 tsp baking powder

Beat eggs and oil separately. Mix coconut flour and baking powder well and sift flour into the egg-mixture while stirring creating a sticky batter. Coconut flour absorbs a lot of liquid so add the last of the flour to the batter after letting it sit for a couple of minutes so it does not become too dry.

aaBefore you divide it into muffin cups, the consistency of the batter should be like scones batter, ie, not runny, and should hold together and be spreadable. Bake at 175 degrees for about 15-20 min.

Lemon Muffins

Basic recipe +
75 cl honey or 50 cl agavesirap or 2 tbsp stevia powder
zest form 1 lemon
juice from half a lemon
+ about 50 g of coconut flour

Spicy Banana Muffins

Basic recipe +
Approximately 50 g of Coconut Flour
0,75 cl honey or 50 cl agavesirap or 1,5 tbsp stevia powder
1 mashed banana
2 tbsp lemon juice
1 pinch of ground ginger
1 tsp cinnamon
1/2 tsp of cardamom
1 pinch ground nutmeg

Chocolate Muffins

Basic recipe
Minus (!) 4 tbsp coconut flour
+ Plus (!) 4-5 tbsp cocoa
0.5 tsp vanilla powder
1 pinch of salt
0.75 cup honey or 0.5 dl agavesirap or 2 tbsp stevia powder
