Avocado is really a unique and exceptional fruit, smooth in texture, rich in nutrients and oils and with subtle flavours. It is suitable for making sauces as well as ice cream and other raw food desserts.
This sorbet has freshness and the aromatic scent of the lime really comes through with the the combination of banana and avocado! I honey-roasted cashewnuts for this recipe but an even better combination is dry-roasted pistachios.
2 ripe Bananas
2 ripe Avocados
Juice from 1 small lime
50 ml Agave Syrup
Mix all ingredients in a food processor and pour into an ice cream maker or place in the freezer.
Stir a few times during the freezing time if you set it in the freezer and then take it out just before it becomes frozen hard.
If you take out hard frozen from the freezer, let it sit for a few minutes and then run it in the food processor again to get a smoother texture.
