Gingerbread-spiced Banana Cake with Ghee

Banana Cake with traditional ginger-bread spices; ginger, cinnamon, cardamom and cloves, baked with coconut flour and ghee. Completely free from grains, white sugar and milk protein.

 Here’s the promised recipe for banana cake baked with coconut flour, flavored with gingerbread spices and ghee! This cake actually got even better revievs from those who tasted it than the banana cake with peanut flour and chocolate I posted a coulpe of weeks ago.

Recipe

3 eggs
3 tablespoons stevia
3 overripe bananas
75 g ghee
75 ml oil, coconut or ordinary rapeseed oil

 150 g coconut flour
1/2 teaspoon salt
1 teaspoon cinnamon
1 tsp ground cardamom1 1/2 tsp ground ginger
1 pinch of ground cloves
1/2 tsp vanilla powder (optional)
2 teaspoons baking powder

Melt ghee and coconut oil or pour in regular canola oil at the end when the ghee has melted. Whisk, stevia and mashed bananas. Mix in the butter / oil while stirring.

Mix coconut flour, bakpluver, vanilla powder and spices. Stir into batter.

Grease a round shape flour it with grated coconut. Pour in batter and bake 40-50 minutes 175 degrees.
