Might this ice cream be the world’s healthiest and tastiest?! I made it for an afternoon snack using chia pudding made with coconut milk and vanilla powder and frozen strawberries. Chia seeds are extremely nutritious, among the most nutritious ingreadients dout there so I’m happy to have found a way to enjoy it as ice cream! If you don’t want to use chia seeds or you don’t have any chia pudding prepared in advance you can use coconut cream instead; that is the white, denser part of the coconut milk separated from the coconut water.
I love to make “instant ice” in the food processor using frozen fruits and berries. It’s so easy, tasty and healthy at the same time. I’ve tried a lot of different combinations before and I have previously posted a recipe for banana ice cream.
Recipes (serves 2)
- about 1/2 cup of chia pudding or slightly less of coconut cream
- about a cup of frozen strawberries
- 1-4 tsp agave syrup depending on how sweet you want it (can be omitted)
- a pinch of vanilla powder
Mix all ingredients in a food processor. Serve immediately!
